Shrimp Veracruz Recipe

This is a great, spicy, winter shrimp dish that you make easily at home and tastes like it comes from a restaurant!


2 Tbs. olive oil

8-10 mini peppers, chopped

1 pint cherry tomatoes, halved

2 cloves garlic, minced

2 Tbs. pickled jalapenos, minced

2 Tbs. capers

1 tsp. dried oregano

½ tsp. salt

2 Tbs. red wine

1 cup seafood stock

Lemons or limes


 Heat olive oil in a large skillet and saute peppers until tender. Add tomatoes, garlic, jalapenos, capers, oregano and salt. Saute for 5-10 minutes. Add the wine and cooked for a minute, then add stock and simmer until sauce comes together. Add shrimp and cook, turning, until shrimp are opaque and cooked through. Serve immediately over hot rice with lemons and limes.
