Have you ever wished you could make mussels marinara just like it’s served at a restaurant? Well, you can! This recipe is a very easy one pot meal that makes 4-6 servings, using frozen mussels which are available at most stores in the seafood aisle. You can serve it as is with bread or pour it over pasta or rice.
Ingredients:
2-lb. package frozen mussels with shells
2-Tbsp. olive oil
14 oz. can chopped tomatoes
2-jars clam juice
½ cup red wine
1 medium onion, thinly sliced
5-cloves garlic, thinly sliced
1 ½ Tbsp. Italian seasoning
1Tbsp. crushed red pepper
Salt and pepper
Lemon wedges
Preparation:
In a large pot, saute onions, garlic, Italian seasoning, and crushed red pepper until veggies are soft. Add tomatoes, red wine, tomato paste, and clam juice. Simmer for about 15-minutes until liquid reduces a bit. Add salt and pepper to taste. Add mussels and simmer for a few minutes more until everything is hot and bubbly. Serve in bowls with lemon wedges, and crusty bread for sopping up the sauce.
