Winter is waning fast, and this is the best time of year for all our favorite spring veggies: broccoli, kale, asparagus, spinach, and peas. This recipe for Orange Udon Noodles can be adapted using your preferred green vegetables or a combination. Feel free to add tofu or shrimp for extra protein.
Orange Udon Noodles with Broccoli
Ingredients:
2 Tbsp. vegetable oil
½ red onion, thinly sliced
2-cloves garlic, minced
1 Tbsp. grated ginger
1 small crown of broccoli, cut into florets
7 oz. fresh udon noodles
1 Tbsp. chili garlic sauce
¼ cup soy sauce
1 tsp. sesame oil
2 tsp. rice wine vinegar
1-2 Tbsp. brown sugar, to taste
Zest and juice of 1 small orange
Preparation:
Heat oil in a saute pan, and add onion, garlic, ginger, and broccoli. While vegetables are cooking, make a sauce with chili garlic sauce, soy sauce, sesame oil, rice wine vinegar, brown sugar, orange juice and zest. After a few minutes, add the sauce and heat until sauce is hot and bubbly. Add udon noodles and stir until noodles are hot. Serve with cilantro and orange slices. (Serves 2)
