The New Year is a great time to make some changes in your diet, especially after the holidays. Eating more plant-based foods will get you started on the road to good health. Start with this easy, vegan, Fire Roasted Tomato Soup, that goes together in about 15-minutes and tastes so much better than canned soup.
Fire Roasted Tomato Soup
Ingredients:
2 Tbsp. olive oil
2 cloves garlic, finely minced
1 medium onion, chopped
1 tsp. dried basil or Italian seasoning
1 cup veggie broth
1-14.5 oz. can fire roasted diced tomatoes
1 cup coconut milk or other non-dairy milk
Salt and pepper to taste
Preparation:
Sauté garlic, onion, and dried basil or Italian seasoning in olive oil for about 3-minutes. Add veggie broth and tomatoes, and bring to a simmer. Stir, taste, and add salt and pepper as needed. Add coconut milk or your favorite non-dairy milk, and heat until piping hot but not boiling.
