Now’s the time to serve chilled foods like gazpacho, shrimp cocktails, and Sriracha pickled eggs! Make these eggs a few days before serving for best flavor. They keep well in the fridge for 2 to 3 weeks or more.
Sriracha Pickled Eggs
2 dozen medium-sized hard boiled eggs, peeled
1/4 cup light brown sugar
2 cups apple cider vinegar
1 cup water
1 Tbsp. red pepper flakes
2 tsp. smoked paprika
1 Tbsp. sea/pickling salt
1 Tbsp. whole black peppercorns
1-2 sliced onions and jalapenos, if desired
½ cup Sriracha Sauce or more to taste
In a medium-size, non-ionized pot combine all the ingredients (excluding the Sriracha Sauce and eggs). Bring mixture to a boil, then remove from heat. Pack hard boiled eggs into sterilized jars and then cover in Sriracha Sauce. Pour the hot vinegar brine over the eggs ensuring that all the eggs are adequately covered in liquid. Cap jar and then store in the fridge.
