Tabouleh is a favorite summer salad – rich in protein, vitamins, and surprisingly satisfying. There are lots of tabouleh recipes out there, and you can make it with couscous or cracked wheat, or other tiny grains. The key to a good tabbouleh, though, is to load it up with parsley. True tabbouleh is actually a parsley salad! The nice thing about this salad is that it keeps well in the refrigerator for several days and tastes good chilled or at room temperature.


Ingredients: 2 cups cooked cracked wheat or couscous 1/3 cup extra virgin olive oil ½ cup fresh lemon juice 1 cup sliced green onion 2 cups chopped parsley ¼ cup chopped mint 3 small chopped tomatoes 1 chopped cucumber, peeled and seeded Salt and pepper

Preparation: Combine all ingredients in a bowl. Chill for about 2-hours before serving.
