Ingredients: 2 cups cooked cracked wheat or couscous 1/3 cup extra virgin olive oil ½ cup fresh lemon juice 1 cup sliced green onion 2 cups chopped parsley ¼ cup chopped mint 3 small chopped tomatoes 1 chopped cucumber, peeled and seeded Salt and pepper
Preparation: Combine all ingredients in a bowl. Chill for about 2-hours before serving.
