Welcome April with Easy Meals

April is one of our favorite months of the year! April showers are making our gardens grow, and the weather is simply perfect, allowing us to get out to the beach and the yard before the heat of summer is upon us. We don’t want to spend a lot of time in the kitchen because that would cut into our outdoor activities – but we still gotta eat. So we rely on simple dishes made with fresh local ingredients, like this recipe for Shrimp Alfredo. Other easy meals include soft tacos, stir frys, Buddha bowls, and easy desserts like ice cream and fruit. Simple Shrimp Alfredo

Ingredients: ½ pound linguini 1 tablespoon olive oil 1 tablespoon butter ½ pound medium shrimp, peeled and deveined 3 cloves garlic, minced ¾ cup seafood broth 6 ounces cream cheese ¼ cup grated Parmesan cheese Fresh parsley

Preparation: Cook linguini according to directions. In a sauté pan, heat butter and oil and add garlic and shrimp. Cook until shrimp are barely done. Remove shrimp with slotted spoon. Add broth and cream cheese to pan and simmer until thick and bubbly. Add shrimp and linguini to pan and stir until hot and shrimp are done. Serve topped with Parmesan cheese and parsley.
