Sheet Pan Steak and Potatoes
Ingredients: 1 pound baby potatoes 3 tablespoons extra virgin olive oil, divided 3 garlic cloves, minced Chopped rosemary Salt and pepper 1 pound flank steak 1 tablespoon balsamic vinegar
Preparation: Boil potatoes until tender. Heat broiler. Transfer potatoes to a large brimmed baking sheet and toss with 2 tablespoons olive oil, garlic, and rosemary. Season with salt and pepper. Rub steak with remaining oil and balsamic vinegar and season generously with salt and pepper.Nestle in the middle of the potatoes in the pan. Broil until steak is medium, 4 minutes per side. Let rest, then slice and serve.
