Overnight Oatmeal a Warm-Weather Favorite

If you think oatmeal is just for the winter months, you haven’t tried refrigerated Overnight Oatmeal, a trendy breakfast item for everyone in the family. Overnight Oatmeal can be made with any number of your favorite ingredients, but we suggest a combination of oats and chia seeds, soy and coconut milk, along with cinnamon and turmeric, for a great combination of protein and carbs that will get you through the morning. We like to make OO in small canning jars, individual servings that are easy to grab right from the fridge, but you can make it in a large bowl, too. Top with your favorite fruits and nuts.

Overnight Oatmeal

Ingredients: ¼ cup quick cooking oatmeal 2 teaspoons chia seeds 2/3 cup of a combination of coconut and soy milk ¼ teaspoon cinnamon ¼ teaspoon turmeric

Preparation: Place all ingredients in a ½ pint canning jar or small plastic container, put on the lid and shake briefly to combine. Place in the refrigerator for several hours or overnight. Serve cold topped with fruit.
