Florida Strawberries Are Here!

This is one of favorite times of the year – it feels like spring, and Florida strawberries are in all the markets. The following is an easy recipe using strawberries, apples, and dried figs. Feel free to use all strawberries if you like, or substitute other fruits.

Rustic Fruit Tart with Filo Pastry

Ingredients: ½ roll of filo pastry, thawed, as directed on package ½ stick melted butter or margarine 5 apples, peeled and sliced 1 pound strawberries, trimmed and sliced 1 handful of dried, chopped figs Sugar, to taste Cinnamon, to taste 2 Tablespoons flour

Preparation: Combine fruits with flour, sugar, and cinnamon. Unroll filo, taking care to cover with a damp towel so that the sheets don’t become dry. Lay one sheet at a time into a rectangular pan that has been lightly greased. Brush it with melted butter. Then lay another sheet, brushing it with butter. Continue until you have used half of the filo roll. (Don’t worry if sheets are messy or they tear.) Put the fruit mixture into the pan and scrunch the filo up along the edge of the pan and over the fruit. Bake at 350 degrees for 35-45 minutes until fruit is soft and pastry is golden brown. If you have leftover butter, pour it over the tart when it’s done. Serve warm or cold.
