Thai Shrimp Skewers

Ingredients: 24 large of jumbo local shrimp, peeled and deveined 2 cups coconut milk ½ cup fresh lime juice ¼ cup Thai fish sauce 4 tablespoons Sriracha sauce Zest from the limes 1 Tablespoon minced garlic 1 Tablespoon minced ginger Handful of chopped scallions 1 teaspoon salt 8 inch bamboo skewers
Preparation: Mix all the ingredients (except for skewers!) in a Ziploc bag and marinate for 30 minutes. While the shrimp are marinating, soak the skewers in warm water. Then skewer the shrimp, 6-per skewer and grill for about 3-4 minutes total, turning as needed, basting with a bit of the marinade. Do not overcook. Serve over rice.
