Family American Flag Cake

When I get together with my family for the 4th of July, I like to engage my grandchildren in some food preparation, and this recipe for an American Flag Cake is easy to make. If you don’t like to bake, this recipe is perfect for you – no baking required! And it utilizes fresh berries, which are in season right now.

American Flag Cake

Ingredients 4 cups strawberries, divided 1 ½ cup boiling water 2 pkgs. red Jello (3oz. size) Ice cubes 1 pkg. prepared pound cake, cut into 10 slices 1 1/3 cup fresh blueberries 1 tub Cool Whip (8 oz. size)

Preparation Slice 1 cup strawberries, and cut the remaining in half. Add boiling water to gelatin in a large bowl. Stir 2 minutes until completely dissolved. Add enough ice to cold water to measure 2 cups. Add to gelatin and stir until ice is melted. Refrigerate for 5 minutes or until slightly thickened. Meanwhile, cover the bottom of a 9X13 glass baking dish with cake slices. Add sliced strawberries and 1 cup blueberries to thickened gelatin, and stir gently. Spoon over the cake and refrigerate 4 hours until firm. Spread Cool Whip over the dessert, and top with the remaining fruit to resemble the American flag, using the strawberries for stripes and blueberries for stars.
