Mixed Berry Pie

Ingredients
For pie crust:
3 cups flour
1 cup shortening
3/4 to 1 cup ice water
Sprinkle of salt and sugar

For berry pie filling:
1 quart of fresh berries, any variety
1 1/2 cups sugar, or more to taste
4 tbsp. cornstarch
1 tbsp. melted butter
Additional sugar

Preparation:
Place flour in a bowl and mix in a sprinkle of salt and a sprinkle of sugar. With a pastry cutter, work the shortening into the flour until mixture resembles coarse meal. Add the ice water, a little at a time, and stir with a fork until the dough comes together. Cut dough in half, roll into balls and chill for at least 30 minutes while you're making the filling.

Place the berries in a bowl. If you're using strawberries, slice them and add to the other berries. Sprinkle with the sugar and cornstarch and mix well with your hands. Roll out each piece of dough into a 10 inch circle. Place one piece of dough into a deep dish 9 inch oiled pie dish.

Put the berries into the prepared pie crust, and place the other round of dough on top. Crimp the edges with your fingers, brush the pie with melted butter and sprinkle with sugar. Cut several slits in the top of the pie and place in a preheated 350 degree oven. Bake for 45 minutes or until the crust is golden brown and the filling is hot and bubbly. Cool on a wire rack.
