Autumn Greens Salad

6 to 8 cups sturdy, leafy greens of your choice
2 cups shredded brussels sprouts
2 cups shredded red cabbage
½ cup toasted nuts of your choice
½ cup dried cranberries
Giant croutons (preferably homemade)

Dressing: ¼ cup olive oil, ¼ cup maple syrup, 2 tablespoons apple cider vinegar, 1 teaspoon lemon zest, 2 tablespoons lemon juice, salt and pepper to taste.

Combine greens, brussels sprouts, and cabbage in a large bowl. Combine dressing ingredients in a jar and shake until combined. Pour over salad, toss lightly, then top with nuts, cranberries, and croutons. Serve immediately. Makes eight portions.
